Today's most commonly used transaxles are limited to using a 200mm (VW) or 9" (Porsche) flywheel & clutch which limits the ability to use today's larger more powerful engines when using a single disc. By using a double or triple clutch disc setup, you effectively multiply the torque load capacity of a clutch without having to use larger transaxles with a larger bell housing or using a heavier pressure plate that can fatigue a driver.
